Cookies are always a kid's favorite. Cookies if made with healthy ingredients can be a super snack for your kids. Here my lil ones love to nibble on something or the other all the time. So am always in search of healthy and hearty snack recipes that I can make in large batches and store. This prevents me from depending on store bought sugar packed junks. Here this is one such recipe which is easy to make while packed with rich nutrients. And these are not just a kid favorite in our household we grownups too have a share.

Ingredients:
Walnuts:1/2 C
Almonds: 1/2 C
Cashewnuts:1/2 C
Dates,pitted and chopped:1 C or 12 nos
Salt:1/2 tsp
Baking soda:1/2 tsp
Vanilla: 1 tsp
Egg:1
Directions
Preheat oven to 180°C/ 350° F degrees.
Process the nuts and dates in a processor.
Then add in the other ingredients and process get an even batter.
Drop round spoonfuls of batter into a lined baking tray, each two-three inches apart.
Press lightly with a fork to flatten the cookies.

Bake for 15-20 mins or until the bottom is golden color.
Cool on a wire rack.

Notes:
You can replace all nuts with a single nut of your choice instead of the mix.
